Farm to Table

At Bistro West, we have an authentic farm to table approach that begins and ends each day at the West Farm. Our goal with these dedicated three plus acres at The West Farm is to produce 100% of all the herbs, fruits and vegetables required for our West Village restaurants.

The West Produce Farm is located just a few miles from West Village off El Camino Real in Carlsbad. The farms close proximity to our restaurants, Bistro West & West Steak and Seafood, make it an ideal location for our chefs to plant, review and harvest the season’s plantings daily. At West our farm is personal. It’s working the soil, nuturing and harvesting which is all performed by our team and culinary professionals who craft the menus around nature.

Winter & Spring Harvest 2014:
Six Varietals of Lettuce: Arugula, Butter, Romaine (Purple & Green), Red/Green Leaf Oak, Curly Endive & Mixed Baby Greens
Baby Carrots – Yellow, Orange & Purple
Beets – Red, Yellow & Chioggia
Rainbow Chard, Green Cabbage, Cauliflower, Kale, Brussels Sprouts, Artichokes, Rhubarb, Radicchio, Spring Onions, Asparagus, Broccoli, Sugar Snap Peas, English Peas, Turnips, Parsnips & Fava Beans

Summer & Fall Harvest 2014:
Watermelon, Honey Dew & Cantaloupe Melons
Radish & Sprouts
Several Varietals of Tomatoes: Heirloom, Zebra Green, Cherry, Pineapple, Ruby Red, Purple & Yellow Tomatoes
Summer Squash, Crookneck, Butternut & Acorn Squash, Pumpkins, Green & Yellow Zucchini, Zucchini Flower, Peppers, Red, Yellow & Purple Bell Peppers & Corn

Herb & Edible Flowers:
