Fall is coming and it’s time for a hearty chili! This is one of our favorite recipes; it’s smoky and just a little spicy. The chipotles and steak seasoning are layered among the spices adding full texture to this Autumn meal. Your mouth will thank you, we promise!
Here we go…
CHEF JEFF’S SMOKY BEEF CHILI
5 lbs ground sirloin
2.5 lbs diced white onions
½ C chopped garlic
2 C chili powder
1/8 C cinnamon
1/8 C ground coriander
1/2 C ground cumin
1/2 C Montreal steak seasoning
1/4 C kosher salt
1 – 10lb cans diced tomatoes
1– 10lb cans kidney beans
13oz (can) diced green chilis
7oz (can) puréed chipotles
Sauté the onions in a large stock pot until soft. Add the garlic and cook for about 5 minutes. Add the ground sirloin and cook for 10-15 minutes stirring constantly to break up the meat. Add the spices and cook for 10 more minutes. Add the tomatoes, green chilis, chipotles, beans and liquid smoke. Cook for another 10-15 minutes. Adjust seasoning to taste. (serves 16)
